There always seems to be so much involved in making a cake or pie truly decadent. When it comes to cookies, all you have to do is add a little bit of icing. That is all that I need and I am good to go.
When I was in college, unbeknownst to my parents, I got myself a job. I was not sneaking, but their desire was for me to concentrate on school and not take on another commitment. Well, the job that I had was not just any job. It was at a local bakery, The Carnegie Cookie Bar and Ice Grill.
Everything that we sold, except the ice cream, was handmade. We made all type of cookies: snicker doodles, oatmeal raisin, and plain chocolate chips – some with raisins, some with pecans, and some with walnuts. There were lemon bars, brownies, and cinnamon rolls that were a morning favorite of the business professionals who frequented the bakery every single day.
One item that we use to carry that was new to me was the combination of icing and a chocolate chip cookie. They were cookie sandwiches. Although I had never seen such a thing, I knew they were totally delicious. The concept is simple, and of course the combination of a cookie and icing is not limited to a chocolate chip cookie, but those two together just happen to be my favorite.
Since employees were perked with free eating of everything that was sold at the bakery, you can imagine that I ate many of those cookies, along with a lot of ice cream. As a result of that freedom, I also earned my first cavity in my life.
To this day, when a chocolate chip cookie is not enough to fill a sugar fix, all I have to do is add that icing and it puts a smile on my face.
All you need to make your own chocolate chip cookie sandwiches are some chocolate chip cookies and your favorite icing recipe. I use the following one:
1 stick unsalted butter
16 ounces of powdered sugar
1 teaspoon of vanilla
1/4 cup of milk (add more if needed, but you want icing somewhat thick)
Combine all ingredients using a hand or upright mixer until icing is light and fluffy, but thick. Grab a knife and spread the icing on one cookie top and cover the icing with another cookie. Eat to your heart’s content.
