Gluten-Free Apple Muffins (Grain and Refined Sugar-Free)

While our family is gluten-free all the time, we also try to eat grain-free whenever we can.  We all seem to feel better without grains.  For lack of a better term, we eat a Paleo diet most of the time.  It is nice to have treats that I can feel great about giving the kids that aren’t full of sugar as well.  These muffins were a hit with the kiddos and parents alike.

Gluten-Free Apple Muffins (Grain and Refined Sugar-Free)

Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup applesauce
  • 1 apple, peeled and finely diced
  • 1/4 cup oil
  • 1/2 tsp baking soda
  • 1 Tbsp cinnamon
  • 1-3/4 cup almond flour
  • 1 Tbsp coconut flour
  • 1 Tbsp vanilla
  • 4 eggs
  • 1 cup shredded coconut, optional

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together.
  3. Fill muffin tins 3/4 of the way full of batter.
  4. Bake 12-18 minutes or until muffin bounces back when tapped.
