This recipe looked so refreshing and delicious that I just had to try it! I made a few changes, simply due to ingredients that I already  had on hand, as well as preference. However, it is still very close to the original, which can be found over at Lemon Stripes.

I will say that it can be a costly dish to make, depending on the time of year. We are not quite into watermelon ‘season’ here, so they are still fairly expensive at the grocery store. However, over the summer, prices will go down. When I want to serve it again, I plan to scour the farmer’s markets for ripe melons and terrific prices. The same goes for the feta cheese. Had I bought a whole chunk, I would have paid less. Alas, my husband and I love the flavored kind, so I decided to splurge a bit this time. I hope to grow my own melons sometime, hopefully next year, and that will provide the best savings of all on this dish!

My family was quite surprised to see me adding cheese to their watermelon salad, but they all tried it willingly, if doubtfully at first. Thankfully, everyone loved the flavors and enjoyed seconds and thirds, all the way down to the youngest little one who is just 2.5 years old.

Watermelon, Feta, & Tomato Salad

Ingredients

  • 6 cups diced watermelon
  • 2 cups strawberry tomatoes
  • 4 oz. tube of basil pesto
  • 1 cup crumbled feta cheese (I actually used 4 oz. tomato basil and 4 oz. plain)
  • 1 jalapeno, or about 1/4 cup sliced jalapeno (mince it yourself)
  • salt
  • olive oil (about 1-2 tbsp)

Instructions

  1. Remove all watermelon flesh from rind and dice into 1-2 inch cubes.
  2. Quarter tomatoes and set aside.
  3. Mince jalapeno.
  4. Gently mix above ingredients together.
  5. Drizzle on olive oil and gently mix again.
  6. Taste and then add salt until you reach the preferred flavor for your family.
