Dairy-Free Oatmeal Apple-Cinnamon Muffins

Over the last 5 weeks my family and I have been on a dietary journey. At the recommendation of our pediatrician, my three youngest children have been taking part in a no-dairy, no-soy ‘trial’, in order to try and determine the cause of their eczema and other allergy symptoms.

In an effort to provide meals and snacks that my children will still enjoy, I have been searching out interesting new recipes and have enjoyed some success. However, I have found that the easiest solution has been to continue preparing some of our tried and true recipes, simply substituting almond or rice milk for cow’s milk, and soy-free butter or coconut oil for ‘regular’ butter, wherever necessary. I have had fabulous results using this method of substitution, and these muffins were a huge hit! I really hope you enjoy them, too.

Dairy-Free Oatmeal Apple-Cinnamon Muffins

Ingredients

  • 1 cup plain flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oats
  • 4 tsp baking powder
  • 3/4 cup sugar
  • 1 tsp salt
  • 1 med apple (1 cup diced)
  • 2 eggs
  • 1/2 cup melted soy-free butter (or coconut oil)
  • 1/8 tsp cinnamon + 1/2 cup sugar (topping)

Instructions

  1. Preheat oven to 400 degrees.
  2. While oven is preheating, dice apple. Feel free to peel the apple or leave it on, however you prefer.
  3. Sift flours, oats, baking powder, sugar, and salt together in a large bowl.
  4. Add diced apple and mix gently until coated.
  5. Beat eggs, then add melted butter and 1 cup of almond or rice milk. Mix gently.
  6. Using your butter or coconut oil, lightly coat your muffin tins.
  7. Fill muffin cups about 3/4 full and sprinkle 1/4 to 1/2 tsp cinnamon sugar mixture onto the muffin mixture in each cup.
  8. Bake for about 20 minutes, or until a toothpick inserted n center comes out clean and the tops are golden brown.

    These look and sound delicious! I am going to try them. I am vegetarian, not vegan, but I do try to reduce the amount of dairy I use. One more tip, which you probably already know: I almost always substitute unsweetened applesauce for the oil in my muffins. They still come out fluffy and they are very moist! You do need to grease the muffin tins or use paper cups then. Thanks for the great recipe!

      They really are delicious! And you can switch out the fruits if you want to try something different such as pears, or even peaches. I’ve tried the applesauce for other recipes in the past. It really is a great way to reduce the fat, and you are right, applesauce makes for a very moist texture. Let us know how your version turns out!

    Love this recipe. My oldest, now twenty-five, had a life-threatening allergy to milk growing up. If milk even spilled on his skin, he broke out in hives. It was difficult to find delicious recipes like your muffins all those years ago. Thanks for the post!
